Mom's Poffertjes!

IT'S SUNDAY! If you know what that means; it's diet cheating day! Actually i'm not a diet person, i'm just a good & happy eater :) but i'm trying to eat well lately (since my mom passed away because of cancer) yet i allow myself to eat more on sunday. So here goes the baby pancakes (are usually known as poffertjes) recipe to brighten your sunday!

You will need :
250 gr wheat flour
2 teaspoons instant yeast
60 gr caster sugar
3 egg yolks
450 ml of milk
1/2 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon of melted butter


How :
First, in a large bowl, add the wheat flour, the yeast, and the sugar, then whisk it thoroughly.

In a separate bowl, mix together the milk and the egg yolks.

Now combine the first and second bowl, whisk well until you have a smooth batter.

Cover the bowl with plastic wrap/kitchen towel and wait for 30 minutes, let the baby pancakes batter to rest.

Next, add the baking powder followed by the salt and the melted butter into the bowl, whisk again lightly.


Heat your poffertjes pan over a medium-high heat and grease the whole pan with melted butter. Once you see that they're dry on top and the bottom is golden brown, turn the babies around and let them cook on the other side for 2-3 minutes until they are golden brown.

And last, serve the baby pancakes with icing sugar, chocolate sauce, or ice cream. Bon appetit!
